Whole grain pancakes

GET IT READY

  • 2 mixing bowls
  • nonstick skillet or griddle

GATHER IT

  • 1 tsp vanilla extract
  • additional butter or oil for cooking
  • 1 cup organic full-cream milk
  • 1/2 tsp salt
  • 1/2 cup oat flour (blend rolled oats to a fine powder)
  • 1 tbsp sugar (optional)
  • 1 cup whole wheat flour
  • 1 large egg
  • 2 tsp baking powder

MAKE IT

Batter:

  1. Mix the whole wheat flour, oat flour, sugar, baking powder, and salt in a bowl. ​
  2. In another bowl, combine organic full cream milk, egg, melted butter or oil, and vanilla extract together. ​
  3. Pour wet ingredients into the dry ingredients and gently stir until combined​.

Pancakes:

  1. Let the batter rest for about 5-10 mins.​
  2. Preheat a non-stick skillet or griddle over medium heat. ​
  3. Lightly grease the skillet with a small amount of butter or oil. ​
  4. Pour 1/4 cup of batter onto the skillet for each pancake. ​
  5. Cook until bubbles form on the surface, then flip and cook until the other side is golden brown. ​
  6. Transfer the cooked pancakes to a plate and keep warm. ​
  7. Repeat the process with the remaining batter. ​
